After the harvest of fruits and vegetables, the process of breathing / respiration continues.

Respiration is the conversion of fruit sugars into CO2 and water using oxygen, releasing energy that is necessary for the processes in the fruit. The respiration proceeds according to the formula below;

C6H12O6 +  6O2     -> 6CO2 +  6H2O + energy + aromatics/ethylene
Sugars     +  Oxygen   ->

CO2      +    Water + energie + aromatics/ethylene

The conditions under which the fruits are stored have a major influence on the course of respiration. The most important factor is temperature. When the temperature is lowered, breathing slows down.

The composition of the atmosphere under which the products are stored also plays a major role. The composition of atmospheric air is approximately 78% N2 / nitrogen, 21% O2 / oxygen and 0.04% CO2 / carbon dioxide.

If the product is kept in a closed space and the oxygen content is reduced and the CO2 content is increased, the process of respiration at a low temperature is even (much) slower and the quality is better preserved. Increasing the CO2 level also counteracts mold growth and reduces the development of rot.

By regulating the atmosphere at the most optimal conditions, gains can be made in terms of quality and the fruits can be stored for longer. Controlled Atmosphere / CA preservation is the general term for this technique.

With the help of CA storage, many products can be stored for much longer. Depending on the product, up to 2 to 4 times longer. Certain apple varieties can be stored for up to 8-12 months!
